We all know about Set Dosa, But I am sure only who visited Adigas in Bangalore knows the exotic taste of Open Set dosa. I wanted to try from so long but I did not know the secret tasty powder recipe which will be sprinkled on the dosa, recently my FIL visited us and he taught me the secret behind open set dosa. It was SUPER HIT. So I thought let me share with you all. Here is the recipe for dosa batter, aloo palya/subzi and the most SECRET recipe of all that is different kind of chutney pudi.
Ingredients for Set dosa Batter:
Rice

Cooked Rice

Urad Dal

Poha /Rice Flakes

¾ cup

Methi seeds

1 tsp

Salt

To taste

Sugar

1 tsp

Channa Dal

Method:
- Soak Rice, Urad dal, Methi seeds, Channa dal in enough water for about 6-8 hours.
- Soak Poha for about 1 hour before grinding.
- Grind all the ingredients along with Poha and Cooked rice by adding enough water to fine paste to form a pouring consistency.
- Allow it to ferment overnight.
- Add salt, sugar to the batter and combine well just before making dosa's.
- Heat the tawa till hot, sprinkle few drops of water to check whether the tawa is hot. Put 1/4 tsp oil and pour 2 laddles of batter (Do not spread it like regular dosa) allow it to cook gradually in the medium flame. Drizzle some oil around the dosa and cook it covered for 2 min.
- Usually for set dosa we should not flip the dosa, but if you feel its not cooked properly flip it around and cook it less than a min and serve hot.
Ingredients for Aloo Subzi/ Palya:
Boiled Potato

Channa dal, Urad dal, Mustard seeds, Cumin Seeds,Curry lvs

Method:
- Heat oil in pan add all the tempering items and saute it well.
- Now add hing, turmeric, ginger, green chilli's, onion if using and saute it well. Add salt in this stage this makes onions to cook fast.
- Now add boiled and mashed potato and mix well.
- Finally add lemon juice and garnish it with cilantro.
Ingredients for Chutney Pudi:
Mine looks yellow in color as I have not used Byadagi Red chilli's. So Make sure to use Byadagi red chilli's to get good color.

Method:
- Add everything to mixer jar and grind it to fine powder.
Serving suggestion:
- Make 1 dosa, place it in a plate.
- Add enough chutney pudi on the dosa, place orange sized ball of aloo subzi on top of it.
- Sprinkle grated carrot, cilantro and grated coconut on top of it. And enjoy this yummy dosa.

Useful kitchen tip of the day:
- Place Betel leaf in the left over Idli or Dosa batter to prevent them from getting sour.
